If J can cook, so can YOU!

Been shamelessly trying to bake cakes for the month of October
& cuz I don’t have an oven, I searched online for a few no-bake cake recipes to try out at home.

I don’t know why and how I got so enthu
My mom says its my 3 mins degree (三分钟热度) acting up again

Got most of my “baking” stuff like the measuring cup, silicon moulds from Daiso

Our first attempt was to make a no-bake oreo cheesecake!

Trevie helped out with removing the cream from the oreo cookies
& then he happily helped to crush the cookies!

We were having so much fun

20131012_232224

then he complained about how tiring it is to whisk & mix

20131012_234115

All done up ready to be put in the refrigerator to set
Trev insisted on adding his --- as quoted by him, Rainbow sugar –.-

Final product!
Shallowest cheesecake ever hahahahaha
But i personally think it tasted pretty awesome

Ingredients for Oreo Cheesecake

36 OREO Cookies, divided
1/4 cup  butter, melted
4 pkg.  (8 oz. each) PHILADELPHIA Cream Cheese (soft in-container, not those block ones)
3/4 cup  sugar
1 tsp.  vanilla

CHOP 15 cookies coarsely. Finely crush remaining cookies; mix with butter. Press onto bottom of pan. Refrigerate for about 20mins while preparing filling.

BEAT cream cheese, sugar and vanilla in large bowl with mixer until blended. Gently stir in chopped cookies; spread onto crust.

REFRIGERATE 4 hours or until firm.

Then on a stay home Saturday,
We tried making APAM POLKADOTS
guess it also means steamed cakes?
I think its a great recipe & totally fail proof!!!
But I had a hard time converting grams to cups. My brain can no longer do maths

Ingredients
3 eggs – straight from the fridge
275g plain flour
220g castor sugar
150ml milk
3 tsp baking powder
1 tsp ovalette / sponge stabilizer
fillings – fruit jams / bananas / nutella / etc
food colouring

Method
1. Add in all ingredients and beat with maximum speed (around 6-8 min) till fluffy.
2. Divide the batter and add food colouring accordingly

Putting the batter into the piping bags

20131013_112151

I tried to use whatever I have available at home HAHAHA
fillings i tried using – bananas, nutella, oreo & cream cheese
Fill the moulds with 1/4 batter, add in the fillings & fill up to 3/4 full cuz the batter will rise while steaming.

& BECOS Trev insisted on putting his rainbow sugar on top of the batter BEFORE steaming, my 1st batch had a few ugly ones HAHAHA

but the rest were really round & cute!

Then I figured, since I CAN STEAM & MAKE CAKES,
how about I make a steamed “rainbow cake”
I also noticed that steamed cakes aren’t exactly as moist and soft as baked ones.
Or maybe I just didn’t whisk enough.
Any tips on making moist cakes without an oven?
